A popular Saudi snack, meat sambousek is made by filling thin dough with cumin- and cinnamon-spiced ground beef, folding it into a half-moon, and frying until golden. Serve hot, especially at iftar or when hosting guests.

How to make it?

Knead the Dough

30 min

Mix the flour and salt and make a well in the center. Add the olive oil and warm water, then knead into a smooth, elastic dough. Wrap in plastic wrap and let rest for 30 minutes.

Cook the Filling

15 min

Cook the onion in olive oil until lightly browned, then add the crushed garlic. Add the ground beef and cook until it changes color. Stir in the cumin, cinnamon, black pepper, and salt. Remove from the heat, mix in the parsley, and let the filling cool.

Shape the pastries

30 min

Roll the dough thin and cut out circles with a glass. Add a 5 ml measure of filling to the center of each circle, fold into a half-moon, and press the edges firmly closed with a fork.

Fry

30 min

Heat plenty of cooking oil over medium heat. Fry the sambousek for 3–4 minutes on each side, until golden. Transfer to paper towels to drain excess oil.

Reminder

Cool the filling completely before adding it to the dough; hot filling can soften the dough and make it difficult to seal. Press the edges closed firmly with a fork, or the filling may spill out during frying. Allergen: Contains wheat (gluten).
