Sübye is a milky, cold summer drink from Izmir and the surrounding region is made by soaking melon seeds in water, blending them, and straining the mixture. Seeds saved while eating melons are washed, dried, and collected throughout the season. Unlike almond-based drinks, it has a lighter flavor with the aroma of fresh melon.
Rub the melon seeds in plenty of water to wash them; any remaining fibrous material can make the drink bitter. Drain them into a large bowl and pour 1 liter of water over the seeds. Leave them to soak.
Put the soaked seeds and their water in a blender. Blend for 3–4 minutes, until the mixture turns milky white. Stop the blender and scrape down the sides, then blend once more.
Pour the mixture through a strainer lined with a double layer of cheesecloth. Squeeze the cloth to extract every last drop. Discard the pulp; the drink should be smooth.
Add the sugar and, if you like, cinnamon. Stir until the sugar dissolves completely. Pour into a pitcher and chill in the refrigerator. Serve in glasses over ice.
Soak the seeds in water for 4–6 hours before blending; this resting time is not included in the recipe time and softens the seeds for a better yield. This fresh drink is not cooked, so keep it refrigerated and use it within 2 days. It may separate as it rests; shake before serving.
