This jarred fruit spread is made with wild strawberries, chia seeds, lemon, and cinnamon. It thickens through the chia seeds’ natural gelling properties, without added sweetener. It is a practical breakfast option for people seeking a spread suitable for diabetes.

Step by Step

How to make it?

1

Mash the fruit

15 min

Lightly mash the wild strawberries in a pot and simmer over low heat for 15 minutes.

2

Add the chia

10 min

Add the lemon juice and chia seeds and cook, stirring, for another 10 minutes. The chia seeds thicken the mixture without added sweetener.

3

Let rest

30 min

Remove from the heat and let rest at room temperature for 30 minutes. During this time, the chia seeds absorb liquid and thicken the mixture.

Reminder

Make sure the fruit juice is truly boiling before adding the chia seeds; otherwise, they may not gel properly. Do not skip the 30-minute rest, when the mixture thickens.
