This olive oil dish is one of the few grain-free recipes among traditional olive oil preparations. Brussels sprouts soften quickly in the pressure cooker and are served cold. Their low carbohydrate content makes the dish suitable for a ketogenic diet.

How to make it?

Sauté the vegetables

Heat the olive oil in the pressure cooker and sauté the thinly sliced onion and garlic cloves until lightly softened. Add the halved Brussels sprouts.

Cook in the pressure cooker

Add the sugar, salt, and a little water, then close the pressure cooker lid. Once it comes to pressure, cook for 4 minutes.

Release the steam and season

Fully release the steam from the cooker before opening the lid. Add the lemon juice; the Brussels sprouts should still be firm.

Cool and serve

Transfer the dish to a wide container and let it cool to room temperature. Then chill it in the refrigerator before serving.

Reminder

Fully release the steam from the pressure cooker before opening the lid. If you open it in a hurry, the lid could fly off and cause burns.

Düdüklünün kapağını buhar tam boşalmadan açmaya çalıştım, kapak açılmadı ve biraz panikledim; birkaç dakika daha bekleyince sorunsuz açıldı ve içindeki lahanalar hâlâ diri duruyordu. Yemeğin kendisi güzel oldu.
