This chutney, served alongside main dishes in Pakistan, is made by quickly softening tomatoes in a pressure cooker. This version uses a sweetener and offers a keto-friendly sauce option for a picnic basket.

Step by Step

How to make it?

1

Sauté the onions

5 min

Sauté the onion, garlic, and ginger in olive oil until softened.

2

Add the tomatoes

3 min

Add the chopped tomatoes, cumin, ground red pepper, and salt, then close the pressure cooker lid.

3

Pressure-cook

20 min

Once the cooker reaches pressure, cook for 20 minutes, then let the pressure release naturally.

4

Thicken the chutney

15 min

Open the lid and add the sweetener. Cook uncovered for 15 more minutes, until thickened.

5

Cool and store

30 min

Transfer to a jar and let cool at room temperature for 30 minutes, then pack it in a picnic basket.

Reminder

Do not skip the uncovered cooking step; without it, the chutney will remain watery and may separate in the jar.
