A breakfast favorite in Australia, passion fruit jam is quick to prepare while preserving the fruit’s sweet-tart pulp and crunchy seeds. This version uses less sugar and balances it with a sweetener to create a version described as having less impact on blood sugar.

Bring the pulp, lemon juice, and powdered pectin to a boil in a saucepan over medium heat.
Add the granulated sugar and sweetener. Once the mixture reaches a full boil, boil it for exactly 1 more minute, then check the consistency with the plate test.
While hot, fill sterilized jars with the jam and seal them tightly. Turn the jars upside down and let them cool.
To check the consistency, drop a few drops of jam onto a cold plate and draw a line through it with your finger. If the line remains, the jam is ready. Turning the jars upside down as they cool creates a vacuum, helping the jam stay unspoiled longer.
