Young green pine cones mark the arrival of spring in Russia and the Caucasus. In this recipe they are lightly roasted in an air fryer to intensify their aroma, then boiled in sugar syrup for hours until deep red. With a resinous, coniferous aroma, this unusual classic is a genuine Russian tradition.

How to make it?

Roast the cones

Lightly roast the washed cones in an air fryer at 150°C / 300°F for 8 minutes. This intensifies the aroma they will release into the syrup. If you do not have an air fryer, roast them for 12 minutes in an oven preheated to the same temperature.

Boil in syrup

20 min

Bring the sugar and water to a boil. Add the roasted cones and lemon juice and boil gently over low heat for 20 minutes, until deep red.

Transfer to jars

5 min

Remove the boiling syrup from the heat and fill clean jars while hot. Close the lids tightly, turn the jars upside down and leave to cool.

Reminder

Use only young, soft green cones that you can easily cut with your fingers. Hardened cones will not soften, however long they are cooked. Contains no allergens.
