A polished addition to breakfast or brunch, onion jam is made by softening sliced onions in a pressure cooker, then thickening them with sugar and vinegar. Serve it with breakfast or on toasted slices of bread.

Step by Step

How to make it?

1

Slice the Onions

10 min

Peel the onions and slice them into thin half-moons.

2

Soften in the Pressure Cooker

8 min

Put the onions, olive oil, and salt in the pressure cooker and close the lid. Cook for 5 minutes after it comes to pressure, then release the pressure immediately.

3

Thicken with Sugar

20 min

Leave the lid open and add the sugar and balsamic vinegar. Cook over low heat for 20 minutes, stirring constantly, until thick and glossy.

4

Transfer to a Jar

10 min

Let the thickened mixture cool until lukewarm, then transfer it to a clean jar.

Reminder

Keep stirring after opening the lid; otherwise, the jam will burn on the bottom of the pot. It may still look runny on the stove, but will thicken noticeably as it cools.

Şeker yerine bal kullanmayı denedim ama kıvam hiç tutmadı, 20 dakika sonunda hâlâ sulu bir hal aldı ve kavanoza aktarınca akışkan kaldı. Belki sirke miktarını da azaltmam gerekiyordu.

Bal, şekerden farklı bir nem oranı taşıdığı için pişirme suyunu değiştiriyor; bal kullanırken sirkeyi bir kaşık azaltıp süreyi 5 dakika uzatmayı deneyebilirsiniz.

Kahvaltı sofrasının yanında servis ettim, 20 dakikalık pişirme sonunda kıvamı tam istediğim gibi koyu ve parlaktı.
