A classic starter from Argentine barbecue culture, provoleta is a firm slice of provolone melted in a cast-iron skillet and seasoned with thyme and red pepper flakes. Its lightly crusted outside and gooey center make it a favorite at grill gatherings.
Rub the cheese slice with thyme, Turkish red pepper flakes, and olive oil.
Cook the cheese in a cast-iron skillet or on a grill over medium-high heat for 6–8 minutes, until the bottom forms a crust and the top softens.
Serve hot immediately, with bread, without removing it from the pan.
