This traditional Indian murabba is made without cooking: sliced unripe green mangoes are layered with sugar in a jar and left in the sun or a warm place for several days. The sugar draws out the mango juice and turns into a thick syrup, a process that takes time and patience.

How to make it?

Slice the Mango

Thinly slice the unripe green mangoes with the peel on.

Layer with Sugar

Layer the sliced mango in a large glass jar with the granulated sugar and crushed cardamom.

Leave in the Sun

Cover the mouth of the jar with a thin cloth and leave it in a sunny place for 5 days, stirring daily; the sugar will draw out the mango juice and turn into a thick syrup.

Strain and Jar

Once the syrup thickens, strain out the mango and transfer it to clean jars. Store in a cool cupboard.

Reminder

Remember to stir the jar every day, or the mango at the top may contact air and develop mold. If the syrup still looks runny after 5 days, it may need to sit for another 2 to 3 days.

Kakule bulamadığım için yerine birkaç adet karanfil kullandım, koku daha keskin ve baharatlı oldu. Şurubun kıvamı benim mutfağımda 5 gün yerine 6 günde oturdu, biraz daha nemliydi ortam.

Kavanozu tarifte önerilen 5 gün yerine 7 gün bekletince şurup daha da koyulaştı, bu kadar uzatmak zarar verir mi yoksa daha mı iyi olur? Kakulenin kokusu şurupla mükemmel uyum sağladı.

Birkaç gün fazladan bekletmek zarar vermez, aksine şurubun kıvamı daha da yoğunlaşır. Mangonun tamamen şurupla kaplı kaldığından emin olduğunuz sürece 7-8 güne kadar uzatabilirsiniz.
