Made with red currants, a summer fruit from Irish gardens, this jam is prepared by briefly roasting the berries in an air fryer to concentrate their flavor, then boiling them with sugar. It is jarred for easy transport in a picnic basket.

How to make it?

Roast the Red Currants in the Air Fryer

Put the stemmed red currants in an air fryer-safe dish and roast lightly at 180°C / 355°F for 8–10 minutes. If you do not have an air fryer, roast them in a preheated oven for the same amount of time.

Boil with Sugar

20 min

Put the roasted currants in a pot with the sugar and water and bring to a boil. Simmer over low heat, stirring often, for 20 minutes, until thickened.

Fill the Jars

5 min

Once the jam passes the consistency test, fill clean jars while it is hot and close the lids. Turn the jars upside down and let them cool.

Reminder

Before filling the jars, test the consistency by dropping a little jam onto a plate and letting it cool. If the drop holds without running, the jam is ready. No major allergen groups are known to be present in this recipe.
