This thick, brightly colored jam balances the characteristic tartness of red currants with sugar. Its little-known but memorable flavor appeals to curious palates.

Step by Step

How to make it?

1

Prepare the currants

15 min

Sort and wash the red currants, then put them in a pot with the sugar and water.

2

Cook with the sugar

30 min

Cook the mixture over low heat, stirring occasionally and skimming off the foam, until the syrup thickens.

3

Cook until set

5 min

Once the syrup thickens, boil for a few more minutes. To check the set, drop a little onto a plate; it is ready if it leaves a trail.

4

Fill the jars

5 min

Fill sterilized jars with the boiling jam and seal them. Turn the jars upside down to cool, then store in a cool, dark place.

Reminder

Red currants are quite tart, so you can add a few spoonfuls of sugar to taste. Skim off the foam regularly as the jam cooks. This jam contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars with the boiling jam, seal them, turn them upside down to cool, and store in a cool place.
