As tomatoes roast, they lose some moisture and their remaining sugars concentrate. Their watery raw tang gives way to a deeper, lightly smoky flavor. That is what sets this dish apart from dips and shepherd’s salad: the tomatoes are cooked rather than simply chopped. After roasting, the skins peel away in one piece. Garlic and olive oil bloom on the hot tomatoes and release their aroma.

Prepare the tomatoes

Preheat the oven to 220°C / 430°F. Wash the tomatoes, cut out the stem ends in a cone shape, and arrange them upside down on a baking sheet. Place the long green peppers alongside them. Drizzle with 1 spoonful of olive oil; the oil helps the skins blister and roast.

Roast in the oven

Place the baking sheet on the upper rack and roast for 25 minutes. The skins will tighten, then crack and lift in several places, while dark brown spots form around the edges. If you remove them before the spots form, they will have no smoky flavor; if they blacken completely, they will taste bitter.

Steam and peel

Transfer the hot tomatoes to a deep bowl, cover, and let them steam for 5 minutes. This resting time is not included in the stated recipe time, but do not skip it: the steam separates the skins from the flesh. Pull off the skins with your fingers, then remove the skins and seeds from the peppers as well.

Chop and season

Coarsely chop the peeled tomatoes; do not use a food processor, as this should remain a chunky meze rather than a smooth dip. Add the crushed garlic, salt, Turkish red pepper flakes, and dried thyme rubbed between your fingers, then drizzle with olive oil. Do not discard the liquid released by the tomatoes; stir it back into the meze. That liquid carries much of the roasted tomato flavor.

Reminder

Do not try to peel the tomatoes while they are hot from the oven. Cover them in a bowl and let them steam for 5 minutes; the skins will come off in one piece. This resting time is not included in the stated recipe time.

Doğrarken suyunu süzmek gerekiyor, süzmedim ve meze tabakta göllendi. Közlenmiş domatesi bir süzgeçte yarım saat beklettim; biriken suyu atmayıp çorbaya kattım, tadı çok yoğun.

Közlenmiş sarımsak burada daha yumuşak duruyor. Çiğ kullanacaksanız ezip tuzla ovun, keskinliği kırılıyor.

Terletme adımı kabuğu soymayı çok kolaylaştırıyor, kapalı kapta on dakika yeterli. Ben derin bir kâseye alıp üstünü tabakla kapattım, streç de aynı işi görüyor. On dakika sonra kabuk parmakla itince tek parça kalkıyor, terletmeden soymaya çalıştığım ilk domateslerde ise kabuk parça parça geldi ve etinin yarısını da beraberinde götürdü. O kayıp mezenin miktarında açıkça görülüyor.

Sivri biberi de közleyip kattım, tarifte yazıyor ama ilk sefer atlamıştım, ikinci sefer meze bambaşka oldu. Biberi domatesten önce çıkarmak gerekiyor, ince kabuğu daha çabuk yanıyor ve fazla kalırsa acı bir kömür tadı bırakıyor.

Domatesleri fırında közlerken tepsinin altına kâğıt serdim, akan su şekerlenip yanıyordu. Domatesleri de sapı yukarı bakacak şekilde dizdim, böylece suyun çoğu içinde kaldı ve kabuk daha çabuk kabardı.
