Dumplings and filled pastries
Shish barak is a hearty Jordanian winter dish of small dough dumplings filled with spiced ground beef and cooked in garlicky yogurt sauce in a pressure cooker. Lowering the heat after the sauce boils helps keep the yogurt from curdling.
Mix the flour, water, and salt to make a firm dough. Wrap it in plastic wrap and let it rest for 20 minutes.
Mix the ground beef with the chopped onion, cumin, and black pepper to make the filling.
Roll the dough out thinly and cut it into small squares. Place filling in the center of each square, bring the corners together, and seal into a pouch.
Mix the strained yogurt with the crushed garlic and a little water, then bring it to a boil. Lower the heat, add the dumplings, and cook in a pressure cooker.
Before serving, drizzle the dumplings with dried mint sautéed in melted butter.
