Prepare the cherries

This refreshing fruit drink is made by simmering fresh or frozen sour cherries with sugar and straining the mixture for a sweet-and-tart balance. Serve it over plenty of ice in summer or warm in winter; it is also enjoyed during cold season.
Place the pitted sour cherries in a pot and add the water.
Simmer over medium heat until the cherries soften and release their juice, then strain to remove the pulp.
Add the sugar to the strained juice and stir well. Continue heating gently until the sugar dissolves completely.
Let the sour cherry juice cool to room temperature, then chill it in the refrigerator. Add a few drops of lemon juice if desired and serve over plenty of ice.
Important: Your hands may become stained while pitting the sour cherries, so wearing thin gloves can make the task easier. Caution: Adjust the sugar to the tartness of the cherries; you may need a little more sugar for especially tart fruit.
