A spicy addition to the olive oil vegetable repertoire, this dish uses an air fryer to roast cubed eggplant with a little oil, then steams it with tomatoes and red pepper flakes. Served cold, it can be stored in the freezer and packs well in a lunchbox.

How to make it?

Roast the Eggplant in the Air Fryer

Toss the cubed eggplant with 1 tablespoon of olive oil. Roast in a preheated air fryer at 190°C / 375°F for 10 minutes, shaking the basket occasionally. If you do not have an air fryer, roast it in an oven preheated to 200°C / 390°F for 15 minutes.

Make the Sauce

Sauté the finely chopped onion in the remaining olive oil until softened. Add the crushed garlic and red pepper flakes, then stir in the grated tomatoes, sugar, and salt. Cook for 8 minutes.

Combine

Add the roasted eggplant to the sauce and steam over low heat for 7 more minutes.

Cool and Serve

20 min

Remove from the heat and let cool to room temperature, then refrigerate for 20 minutes. Sprinkle with parsley and serve cold.

Reminder

Do not overcrowd the air fryer basket while roasting the eggplant; otherwise, steam can build up and the eggplant may cook by steaming instead of roasting.

Airfryer'da 190 derece yazıyor ama benim cihazımın en yüksek ayarı 180, bu farkla patlıcan gerçekten kavrulur mu yoksa haşlanmış gibi mi kalır? Bir de sepeti yarı doldurup iki partiye bölsem daha iyi olur mu diye düşünüyorum.
