A surprising Turkish preserve, spicy tomato jam is made by simmering ripe tomatoes with a small amount of sugar and hot red pepper flakes until thick. Its sweet-hot balance makes it an essential accompaniment to cheese boards.

Step by Step

How to make it?

1

Prepare the Tomatoes

5 min

Chop the ripe tomatoes into small pieces.

2

Simmer

12 min

Bring the tomatoes, granulated sugar, lemon juice, red pepper flakes, and salt to a boil in a pot over medium heat. Boil for 12 minutes.

3

Thicken

13 min

Lower the heat, skim the foam, and stir constantly as it simmers for 13 more minutes, until thick.

4

Fill the Jars

5 min

While hot, transfer the jam to clean jars and seal the lids tightly.

Reminder

Skim the foam regularly as the jam simmers, or it may look cloudy.

Kıvamı tutturmak için tarifte yazan 13 dakika yetmedi, 20 dakika daha kaynattım. Sonuç çok güzel oldu ama tarifte belirtilenden epey daha uzun sürdü, bunu bilmekte fayda var.
