Cook in the pressure cooker

A traditional drink served at Korean festive meals, sujeonggwa is made by quickly boiling cinnamon and ginger in a pressure cooker, sweetening the liquid with brown sugar and chilling it. The pressure cooker infuses the water with the spices much faster than the traditional method.
Put the water, cinnamon stick and ginger in the pressure cooker and close the lid. Cook for 15 minutes from the moment you hear it boiling.
Remove from the heat and allow the pressure to release naturally.
Open the lid, add the brown sugar and stir until dissolved.
Strain the drink through a fine sieve and chill in the fridge for at least 2 hours.
Pour the chilled drink into glasses and serve with a few pine nuts sprinkled on top.
Wait for the pressure to release naturally before opening the pressure cooker lid; otherwise, hot liquid may splash out.
