Swiss chard leaves contain a lot of water; if added directly to the filling, they will release it during boiling and the dumplings can dissolve from the inside. For this recipe, blanch the chard, cool it in ice water to stop the cooking and preserve its color, then squeeze it dry by the handful. Lor cheese is added to bind any remaining moisture.

Blanch and squeeze the Swiss chard

Separate the Swiss chard stems and chop them finely. Add the stems to boiling salted water first; after 3 minutes, add the leaves and blanch for 2 more minutes. Drain and rinse with ice-cold water to preserve the color. Squeeze handfuls dry, then chop finely.

Knead the dough

Knead the flour, egg, salt, and water for 10 minutes to make a firm dough. Cover with a damp cloth.

Cook the filling

Finely chop the onion and sauté in oil for 8 minutes. Add the squeezed Swiss chard and cook for 3 more minutes to drive off any remaining moisture. Remove from the heat and let cool until lukewarm, then add the lor cheese and seasonings.

Roll out the dough

Divide the rested dough into four pieces and roll each to 1.5 mm thick. Cut into 3.5-centimeter squares.

Fill and seal

Place half of one 4 ml measure of cooled filling on each square. Bring the four corners together in the center and press the edges twice to seal. The vegetable filling will still release some water as it boils; if the seal is loose, the dumpling will come apart.

Boil and sauce

Bring 3 liters of salted water to a boil and add the dumplings. Once they float, cook for 6 more minutes, then drain. Whisk the yogurt with garlic and spread it over the dumplings. Melt the butter, remove it from the heat, stir in the red pepper flakes, and drizzle over the top.

Reminder

The 40-minute dough rest and the cooling time for the blanched chard are passive waiting periods and are not included in the duration. Do not discard the chard stems; they take longer to cook than the leaves, so chop them separately and add them to the boiling water first. Before sealing the filling, squeeze it in your palm: if liquid comes through your fingers, squeeze it more.
