How to make it?

Toast and Grind the Seeds

Toast the coriander and cumin seeds in a dry skillet for 2 minutes, until fragrant. Grind them with a mortar and pestle for 8 minutes.

Make the Paste

Add the garlic, red pepper flakes, olive oil, and salt. Mix for 10 minutes, until you have a smooth paste.

Portion and Freeze

Divide the paste among small ice cube tray compartments and freeze.

Reminder

Watch the pan closely while toasting the seeds; they can burn in seconds and make the entire paste bitter. Freeze portions in a small ice cube tray so you can thaw only what you need.

Tohumları tavada fazla kavurdum, dumanı çıkana kadar başka işle uğraşıp beklemişim; harç normalden daha koyulaştı ve tadı acımsı oldu. Bir dahakine tavadan gözümü hiç ayırmadan çok daha kısa süre kavuracağım.
