Taktouka is a light Moroccan appetizer made by quickly sautéing and mashing charred green bell peppers and tomatoes with garlic and cumin. Cooked with little oil, it is a low-calorie option for a snack.

Char the Peppers

Char the green bell peppers over a burner flame or in the oven until their skins blacken, then peel them.

Sauté

Sauté the garlic in olive oil until fragrant. Add the chopped tomatoes, cumin, red pepper flakes, and salt. Cook over low heat for 10 minutes.

Mash and Stir

2 min

Finely chop the charred peppers and add them to the tomato mixture. Lightly mash with a fork, stir for 2 more minutes, and serve.

Reminder

If you do not peel the peppers thoroughly, the salad will have a rough texture. After charring, cover them for a few minutes to steam; the skins will come off easily.

Domatesleri kabuğunu soymadan eklemiştim, pişince kabuklar ayrılıp mezenin dokusunu bozdu; bir dahaki sefere haşlayıp soyacağım. Tadı yine de güzeldi, sadece görünüşü biraz dağınık kaldı, sofraya çıkarmadan önce bir tur daha ezmem gerekti.
