Place the tamarind in a container with hot water, cover, and let it soak at room temperature for at least 8 hours.
Mash the soaked tamarind thoroughly by hand to release the pulp into the water, then strain through a fine-mesh strainer.
Add the sugar to the strained liquid and stir well. If desired, balance the tartness with lemon juice, then chill in the refrigerator.
Important: Remember to remove the tamarind seeds while soaking; if crushed, they can leave a bitter taste. Caution: Add sugar a little at a time and taste as you go, since the fruit’s tartness varies.
