Stir in the lemon juice just before removing the preserves from the heat. Remove the cinnamon stick, fill clean jars with the hot preserves, and seal immediately.

Suda bekletme süresini otuz dakika yerine kırk beş dakikaya çıkardım, demirhindi daha kolay dağıldı ve süzme işlemi normalden hızlı bitti; kaynatmayı da elli yerine kırk dakikada tamamladım, kıvam yine de güzel oldu.
