This waste-reducing preserve is made by lightly drying tangerine peels in an air fryer to reduce their bitterness, then simmering them with granulated sugar. Drying softens the peel and helps it absorb the syrup.

How to make it?

Cut the Peels

Cut the tangerine peel into thin strips.

Remove the Bitterness

Boil the peel strips in plenty of water and drain. Repeat this process twice to reduce the bitterness.

Dry in the Air Fryer

Arrange the drained peel strips in a single layer in the air fryer basket and dry them lightly at 150°C / 300°F for 8 minutes. If you do not have an air fryer, dry them for the same time in an oven preheated to 150°C / 300°F.

Simmer with Sugar

15 min

Simmer the dried peel strips with the granulated sugar, water, and lemon juice in a pot over low heat for 15 minutes, until thickened.

Fill the Jars

Spoon the hot mixture into sterilized jars and seal the lids tightly.

Reminder

Remove as much of the white pith from the peels as possible; otherwise, the preserves may taste too bitter. Do not extend the air-frying time, or the peels may become too firm to absorb the syrup.

Airfryer'da kurutma süresini 8 dakika yerine 12 dakika yaptım, kabuklar biraz fazla sertleşti ve şurubu tam emmedi; bir dahaki sefere süreyi kısaltacağım. Kaynatma süresi olan 15 dakika ise gayet yeterliydi.
