Teh halia is a spiced Malaysian hot drink made by boiling black tea with fresh ginger, cardamom, cinnamon, and cloves, then pulling it with milk to create a frothy finish. It is often served at weddings and celebrations.

How to make it?

Boil the spices

Bring the water, sliced fresh ginger, crushed cardamom, cinnamon stick, and cloves to a boil in a pot. Simmer for 5 minutes.

Brew the tea

Add the black tea, reduce the heat, and let it steep for 3 minutes.

Pull the tea with milk

Add the milk and granulated sugar. Pour the mixture back and forth between cups from a height several times, until frothy. Strain and serve hot.

Reminder

To prevent splashes when pulling the tea from a height, start with a low pour and gradually raise it. Contains dairy.
