Whisk egg yolk and lemon juice, then gradually whisk in hot chicken stock to make a smooth emulsion without curdling. The sauce uses no thickening powder, making it suitable for a ketogenic diet, but the risk of splitting makes the technique demanding.

How to make it?

Start the chicken stock

Put the chicken legs and water in a saucepan and bring to a boil.

Simmer the chicken

45 min

Simmer over low heat for 45 minutes, skimming off the foam from time to time.

Strain the stock

Strain the liquid and set the chicken aside. Reserve 2 × 200 ml measures of hot stock.

Make the emulsion

15 min

Whisk the egg yolk with the lemon juice. While whisking constantly, pour in the hot stock in a thin stream, taking care not to let the mixture curdle.

Season and serve

Season with salt and serve immediately.

Reminder

Pour the stock into the egg yolk in a thin stream while whisking continuously; otherwise, the egg may coagulate and the sauce will split. Allergen: contains egg.

Emülsiyonu ilk denemede hiç kesmeden yapabildim, adımlar gerçekten net anlatılmış. Tavuk suyunun kendi lezzeti sosu çok zenginleştirdi.

Tarifte ketojenik deniyor ama bal kabağı çorbasına eklediğimde nişastalı sebzeyle birleşince tam keto sayılmaz bence, sosun kendisi elbette yumurta ve limonla unsuz kalıyor. Yine de emülsiyon tekniği harika anlatılmış.

Haklısınız, sosun kendisi ketojenik ama yanına eklediğiniz sebzeye göre öğünün tamamı değişebilir. Ketojenik etiketi yalnızca bu sos için geçerli, tarifi seçtiğiniz garnitürle birlikte değerlendirmek daha doğru olur.
