Inspired by Thai satay sauces, this sauce is made by simmering peanut butter with coconut milk and spices, then thickening it with brown rice flour. The whole-grain flour makes the sauce more nutritious.
Stir the peanut butter, coconut milk, soy sauce, lemon juice, brown sugar, garlic and hot red pepper flakes together in a saucepan.
Heat gently for five minutes, stirring.
Mix the brown rice flour with the water and add it to the pan. Cook for another five minutes, stirring frequently, until thickened.
Let the sauce rest at room temperature for forty-five minutes; this allows the whole-grain flour to thicken fully.
