Pressure-Cook the Beans

Olive oil dishes
A lesser-known dish in Turkey’s olive oil cooking tradition, this pilaki is made by pressure-cooking white beans with vegetables until tender, then adding shrimp at the end. This meat-free dish is suitable for pescatarians who eat seafood.
Add the soaked dried beans, carrot, celery, and onion to the pressure cooker. Cook for 20 minutes after the cooker comes to pressure.
Briefly sauté the crushed garlic cloves in olive oil. Add the grated tomato, sugar, and salt, then cook for 10 minutes.
Drain the beans from the pressure cooker and add them to the sauce. Simmer uncovered over low heat for 10 minutes, until the sauce thickens.
Add the peeled shrimp and cook for 8 minutes, just until pink. Do not cook it longer.
Remove the pilaki from the heat and let it cool at room temperature for 20 minutes. Serve with lemon slices.
Add the shrimp to the sauce near the end of cooking; a long simmer can make it rubbery. Remove it from the heat as soon as it turns pink. Allergen: contains shellfish (shrimp).
