Uzbek kompot is a refreshing drink made by simmering dried apricots and raisins with a cinnamon stick, then leaving it to steep; it needs no added sweetener. Serve it warm or chilled for brunch.
Rinse the dried apricots and raisins thoroughly with plenty of water.
Put the rinsed dried fruit, cinnamon stick and water in a saucepan and bring to a boil.
Once boiling, reduce the heat and simmer for a further 30 minutes.
Remove from the heat and leave to steep at room temperature for 45 minutes. Then chill in the refrigerator and serve.
Do not cover the pot completely while the kompot is boiling, to prevent it from boiling over. Do not shorten the steeping time; this allows the dried fruit flavor to infuse into the water.
