Carrots and chickpeas, often paired in Uzbek pilafs, are slowly cooked with olive oil and then cooled to make this Mediterranean-style meze. The carrots are lightly roasted in an air fryer first to intensify their sweetness.

How to make it?

Roast the Carrots

Place the thickly cut carrots in the air fryer basket and roast at 190°C / 375°F for 10 minutes. If you do not have an air fryer, roast them in an oven preheated to the same temperature for 16 minutes.

Saute the Ingredients

Saute the chopped onion in olive oil until softened and lightly golden. Add the roasted carrots, chickpeas, cumin, and sugar.

Cook Over Low Heat

12 min

Cover and cook the mixture over low heat for 15 minutes.

Cool and Serve

3 min

Remove from the heat and let it cool to room temperature, then serve cold.

Reminder

Do not roast the carrots too long in the air fryer, or they may become too soft during the next cooking step.

Havuçları airfryer'da kavurmak beklediğimden çok daha kolay oldu, tatlılığı belirgin şekilde arttı. Nohutla birlikte pişince doyurucu bir meze çıktı, soğuduktan sonra daha da lezzetlendi gerçekten.
