Van’s famous herbed cheese is a curd-style cheese fermented with highland herbs. For this mezze, it is sliced thickly and served with olive oil and Turkish red pepper flakes. Served this way, the cheese is often paired with roasted tomatoes at parties.

How to make it?

Soak the cheese

Soak the slices of herbed cheese in cold water for 25 minutes to reduce the saltiness.

Roast the tomato

Roast the tomatoes, peel them, and chop them coarsely.

Arrange the cheese

Remove the cheese slices from the water, pat them dry with paper towels, and arrange them on a plate.

Serve

Place the roasted tomato to the side, then drizzle the cheese with olive oil and sprinkle with Turkish red pepper flakes, mint, and walnut pieces.

Reminder

Herbed cheese is very salty. If you do not soak it in cold water for at least 25 minutes before serving, it may taste too salty. Contains an allergen: milk/dairy.

Otlu peyniri bulamayan biri için lor peyniri makul bir alternatif olur mu, yoksa ot aroması olmadan tadı çok mu farklı çıkar; bir de közlenmiş domates yerine taze domates kullanılabilir mi?

Lor peyniri dokusu benzer ama otlu peynirin karakteristik ot aroması olmayacağı için tadı belirgin şekilde farklı olur, yine de meze olarak güzel durur. Domatesi közlemeden taze kullanabilirsiniz, sadece o dumanlı tat eksik kalır.

Tarifte 25 dakika suda bekletin diyor, ben bir kez 15 dakikada çıkardım ve peynir hâlâ çok tuzluydu, sofrada kimse fazla yemedi; ikinci denemede tam 25 dakika bekleyince tuz dengesi çok daha iyi oldu.
