This traditional Ottoman-style drink is made by boiling sour cherries with cloves and cinnamon, then cooling. Its refreshing sweet-sour balance makes it a classic accompaniment to meals, especially at holiday celebrations and gatherings.

How to make it?

Boil the sour cherries

Put the sour cherries and water in a saucepan and add the cloves and cinnamon stick. Bring to the boil over medium heat and cook until the cherries break down and color the water. Skim off any foam that collects on the surface.

Add the sugar and steep

50 min

Add the sugar and boil for a few more minutes. Once it has fully dissolved, turn off the heat. Cover and leave to steep for 45 minutes so the spices flavor the liquid.

Strain and chill

Strain the drink to remove the sour cherries and spices. Pour into a pitcher, let it cool to lukewarm at room temperature, then refrigerate until thoroughly chilled. Serve cold.

Reminder

Important: skim off the foam with a spoon as the drink boils to keep it clear. Chilling it thoroughly before serving lets the flavors settle. It can be kept in a covered pitcher in the refrigerator for a few days.
