Grate the Onion

Finely grate the onion into a bowl using the small holes of a grater, keeping all its juice. Do not discard the liquid; it is what binds the dressing. If the onion’s sharpness is too strong, put the grated onion in a strainer and rinse it under cold running water for 1 second, but do not wash away all its juice.

Whisk the Liquids

In a jar, mix the soy sauce, rice vinegar, and sugar until the sugar dissolves. Whisk in both oils in a thin stream. The mixture should turn cloudy and look unified for a couple of seconds.

Add the Onion and Taste

Add the grated onion with its juice and stir; the dressing will thicken slightly and turn from clear to cloudy. Stir in the toasted sesame seeds last. Shake the jar 1 more time just before pouring the dressing over the salad.
Reminder
The oil and vinegar will separate as the dressing sits; this is normal. Shake it in a jar just before serving.
