A Jordanian dessert, warbat is made by crisping thin phyllo sheets in the oven, filling them with cooked custard, and finishing with syrup. Its layers combine crisp and soft textures in every slice.
Cook the milk, starch, sugar, and egg in a saucepan, stirring constantly, for 8 minutes, until thickened. Add the vanilla and let the custard cool.
Brush the phyllo sheets with melted butter and place them on a baking sheet. Bake in an oven preheated to 180°C / 355°F for 12 minutes, until golden.
Layer the baked phyllo sheets with the cooled custard.
Drizzle the syrup over the warm pastry, sprinkle with crushed pistachios, and serve.
Cover the phyllo sheets with a damp towel while baking; uncovered sheets dry out and break quickly. Allergens: contains wheat (gluten), milk and dairy products, eggs, and tree nuts (pistachios).
