This homemade winter tea blend combines rose hips, linden blossoms, and dried apple peel in a jar for use throughout the season. The three ingredients need different steeping methods: tough rose hips need a brief boil, while boiling linden blossoms makes them lose their aroma. For that reason, boil the blend with the rose hips first and add the linden blossoms after removing it from the heat.

How to make it?

Break up the rose hips

Crush the dried rose hips into two or three pieces in a mortar or between a cloth with a rolling pin; whole rose hips will not release their flavor into the water. Do not try to remove the fuzzy seeds; they will stay in the strainer at the end of brewing.

Assemble the blend

Combine the crushed rose hips, linden blossoms, and apple peel in a large bowl, then transfer the blend to a dry, airtight jar. Write the date on the jar.

Boil with the rose hips

15 min

For 1 liter of tea, measure out 20 g of the blend. Bring the rose hips and apple peel to a boil in 1.2 liters of water, then simmer covered over low heat for 8 minutes.

Add the linden and steep

Turn off the heat, add the linden blossoms from the blend, cover, and let steep. Strain through a double-layer strainer and pour into cups; this keeps the fine hairs from the rose hips out of the tea.

Reminder

After adding the linden blossoms, steep covered for 8 minutes; this resting time is not included in the recipe time. The blend keeps for 1 year in an airtight jar stored away from light. This recipe describes both the jarred blend and one liter of tea made from it; save the remaining blend for later batches.
