Prepare the Yuja

A staple of Korean winter drinks, yuja cheong is a sweet citrus preserve made by thinly slicing yuja and mixing it with an equal weight of sugar. Stir it into hot water as a drink or spread it over breakfast toast.
Wash the yuja thoroughly and slice it paper-thin with the peel on. Remove the seeds.
Thoroughly mix the sliced yuja with an equal weight of sugar in a bowl. Drizzle with lemon juice and let stand for 10 minutes, until the sugar begins to dissolve.
Press the mixture firmly into a sterilized jar, seal it, and store in a cool place.
Keep the jar at room temperature for the first few days and shake it once a day to help the sugar dissolve completely. After 1 week, move it to the refrigerator, where it can be stored for months.
