Beef mince is kneaded with plenty of chilli flakes and cumin, then grilled over the coals for these patties, served alongside a tomato and pepper-paste relish for a spicy late-night or between-meal favourite.

How to make it?

Mix the patties

10 min

Knead the beef mince with the grated onion, finely chopped parsley, chilli flakes, cumin, black pepper and salt.

Rest

60 min

Rest the mixture in the fridge for 60 minutes; this time lets the spices meld with the meat.

Make the spicy paste

8 min

Dice the tomatoes and mix with the pepper paste, finely chopped garlic, olive oil and lemon juice.

Shape and grill

10 min

Shape the mixture into cylindrical patties and grill over the coals, 5 minutes per side for 10 minutes total; serve with the spicy paste.

Reminder

Do not shape the patties before the mixture has rested for at least 60 minutes, or they may fall apart on the grill. Make the spicy paste just before serving rather than in advance, it releases liquid as it sits.
