A surprising jarred flavour from Turkish kitchens, spicy tomato jam is made by simmering ripe tomatoes with a small amount of sugar and chilli flakes for a long time until thickened. The sweet-spicy balance makes the jam an essential companion to cheese boards.

How to make it?

Prepare the tomatoes

Cut the ripe tomatoes into small pieces.

Simmer

12 min

Simmer the tomatoes with the sugar, lemon juice, chilli flakes and salt over medium heat for 12 minutes.

Thicken

13 min

Lower the heat and continue simmering, stirring constantly and skimming the foam, for another 13 minutes until thickened.

Jar it

5 min

Ladle the hot jam into clean jars and seal the lids tightly.

Reminder

Skim the foam regularly while simmering, or the jam will look cloudy.

Using fresh chilli instead of chilli flakes can give the jam a livelier red-green look.

Kıvamı tutturmak için tarifte yazan 13 dakika yetmedi, 20 dakika daha kaynattım. Sonuç çok güzel oldu ama tarifte belirtilenden epey daha uzun sürdü, bunu bilmekte fayda var.
