Coming from Australia's lamb-raising tradition, air-fried lamb pilaf is made by cooking lamb cubes quickly in the air fryer and folding them into spiced rice pilaf. Cooking the lamb separately keeps the pilaf's own texture while leaving the meat's exterior crisp.
Sauté the onion in the olive oil, then add the rice and chicken broth and cook covered for 15 minutes.
Toss the lamb cubes with olive oil and salt and air-fry at 200°C for 15 minutes; if you don't have an air fryer, bake in an oven preheated to 200°C for the same time.
Fold the cooked lamb into the pilaf and serve hot, topped with lemon juice and parsley.
Don't overlap the lamb cubes when arranging them in the air fryer, or one side will cook while the other stays raw.
Soaking the rice in warm water for 10 minutes before cooking helps the grains cook more evenly.
