Made by marinating leftover raw lamb liver with cumin and red pepper flakes and cooking it in the air fryer with little oil, this dish comes out far lighter than pan-frying. The short cooking time also keeps the liver from turning tough.

Step by Step

How to make it?

1

Cube the liver

5 min

Cut the leftover lamb liver into cubes.

2

Season

10 min

Toss the cubed liver with olive oil, cumin, red pepper flakes, salt and black pepper, then let sit for 10 minutes.

3

Cook in the air fryer

12 min

Arrange in a single layer in the air fryer basket and cook at 200°C for 12 minutes, shaking the basket once halfway through. If you don't have an air fryer, you can cook it for the same time in an oven preheated to 200°C.

4

Serve

3 min

Serve hot.

Reminder

If you cook the liver right after marinating, the spices won't fully penetrate, so let it sit for at least 10 minutes. If you don't shake the air fryer basket once halfway through, the bottom pieces dry out too much.
