Cleaned tripe is cut into thin strips and slowly sautéed in garlic and butter until it turns wonderfully tender. Made without flour or starch, this sauté is a Balkan offal dish that fits a ketogenic diet.

Cook the crushed garlic cloves in butter over low heat for 2 minutes.
Add the boiled tripe to the pan with the pul biber, salt and black pepper, and sauté over low heat, stirring often, for 25 minutes until tender.
Do not skip pre-boiling the tripe before sautéing, or the texture stays unpleasantly tough. Allergens: contains milk and dairy (butter).
If the sauté turns out too dry, adding a few spoonfuls of the boiling liquid and cooking a few more minutes brings the texture back.
