These rolls are made by wrapping leftover boiled beef in a mustard-and-pickle filling inside lavash flatbread and crisping them in the air fryer; they can be frozen ahead of time for a quick snack.

How to make it?

Prepare the filling

Mix the shredded beef with the finely chopped pickle, dill and black pepper in a bowl.

Fill the lavash

20 min

Spread a thin layer of mustard over each lavash, divide the filling among them and roll up tightly.

Freeze or air-fry

5 min

If you are not cooking them right away, wrap the rolls in plastic and freeze; otherwise arrange them in the air fryer basket.

Air-fry

15 min

Air-fry the rolls until the outside crisps up and turns golden; add a little extra time if cooking from frozen.

Reminder

Wrap the rolls tightly in plastic before freezing; trapped air causes freezer burn and dries out the lavash. When air-frying from frozen, add a few extra minutes, since the centre may not heat through otherwise. Allergens: contains wheat/gluten (lavash).

If you use finely chopped fresh cucumber instead of pickles, the flavour turns fresher; you can add a few extra drops of mustard for tang in that case.
