A simple example of the Turkish olive oil dish tradition, this recipe cooks pumpkin slices with onion and tomato in the airfryer until soft. With no added sweetener, this plain version can be served chilled at the breakfast table as a sweet-savoury side.

How to make it?

Prepare the pumpkin

Peel the pumpkin and slice it about half a centimetre thick.

Sauté

Sauté the onion in olive oil for a few minutes, add the tomato and stir in the salt.

Cook in the airfryer

20 min

Toss the pumpkin slices with the onion and tomato, arrange in the airfryer basket and cook at 180°C for 20 minutes. If you don't have an airfryer, you can cook them for the same time in an oven preheated to 180°C.

Serve

5 min

Sprinkle with dill and serve warm or cold.

Reminder

Arrange the pumpkin slices in a single layer in the basket; stacked slices won't cook evenly.

If serving cold, chill it for at least 2 hours after cooking; the flavour of olive oil dishes becomes more pronounced as they cool.
