In the remaining oil, sauté the onion until golden; add the garlic and ginger and sauté for 1 more minute. Add the cumin, turmeric, garam masala, and red pepper flakes and stir.
Add the tomato puree and cook over low heat until the oil separates; slowly stir in the yogurt and cook for a few more minutes.
Add the fried eggs to the sauce, add a little water, and simmer over low heat for 5-6 minutes; serve with hot rice or bread.
Important: Before adding the boiled eggs to the sauce, peel them and prick them lightly with a fork; this lets the sauce soak in a little and improves the flavor. Allergen: contains egg.
If you want to reduce the spice level, you can cut the green pepper and red pepper flakes by half; the sauce's flavor won't be affected.
