Tamagoyaki, made by cooking beaten eggs seasoned with sugar and soy sauce in thin layers and rolling them one over another, is the familiar rolled omelet of Japanese breakfast tables and bento boxes. It's sliced and served warm or cold.
Whisk the eggs with sugar, soy sauce, and salt until smooth.
Pour a thin layer of the mixture into a greased pan; once half-cooked, roll it from one end of the pan to the other.
Push the roll to the empty side of the pan, pour in a new layer of mixture, and roll it toward the previous roll to build up the layers.
Let the roll rest for a few minutes, then cut into slices and serve.
Important: Roll each layer while it's thin and lightly cooked, otherwise the roll can fall apart. Allergen: contains egg; soy sauce may contain wheat (gluten). Note: Keep the pan at medium-low heat, as high heat hardens the layers quickly and makes them brittle.
If you refresh the pan with a thin layer of oil before adding each layer, the roll slides easily without sticking. After slicing, letting the roll rest for a few minutes also helps the layers on the cut surface look neat.
