Born from Peru's Chinese immigrant kitchens, arroz chaufa is made by stir-frying pre-cooked, chilled rice with chicken, egg and spring onion over high heat. It contains no dairy, making it a filling dish for a crowded party table.

Once the rice has cooled to room temperature, chill it in the fridge for at least 90 minutes to dry out the grains.
Sauté the chicken breast in olive oil, add the garlic, ginger and bell pepper, and cook for 15 minutes until the chicken is done. Beat the eggs, pour them in at the edge of the pan, and stir them through as they cook.
Add the chilled rice to the pan with the soy sauce and black pepper, and stir-fry over high heat for 10 minutes, then scatter with spring onion before serving.
Always chill the rice before stir-frying it; hot rice steams in the pan and turns sticky. Allergens: contains egg; soy sauce may contain gluten.
Cooking the rice the night before and chilling it overnight gives far better results than same-day cooling; the grains stay drier and separate more easily.
