Avocado quinoa sauce is a Colombian-inspired sauce made by blending mashed avocado with cooked quinoa and seasoning with lime and coriander. Mashing the quinoa to just the right consistency to bind the sauce takes real experience and gradual mixing.

How to make it?

Cook the quinoa

Boil the rinsed quinoa in water, then simmer over low heat for 15 minutes and let cool.

Combine

Mash the avocado and gradually mix in the cooked quinoa, lime juice, coriander, olive oil and salt to a sauce consistency.

Serve

Prepare just before serving and offer alongside toasted slices or vegetables.

Reminder

Rinse the quinoa well before cooking, or its natural coating leaves a bitter taste. Mash the avocado just before serving, or it will discolour on contact with air. Allergens: this recipe contains none of the main allergen groups.

Using bulgur instead of quinoa gives the sauce a more pronounced whole-grain flavour; you may need an extra tablespoon of cooking liquid in that case.

Kinoa yerine editör notundaki gibi bulgur kullandım ve pişirme suyunu bir kaşık artırdım, tat gerçekten daha yoğun oldu ama bende biraz fazla ağır ve tam tahıl ağırlıklı kaldı.
