A classic of Australian picnic baskets and school lunchboxes, zucchini slice is made by mixing grated zucchini with egg and cheese and cooking it in the airfryer. Using almond flour makes the recipe both low-carb and diabetic-friendly.

How to make it?

Prepare the zucchini

Squeeze the moisture out of the grated zucchini using cheesecloth.

Make the batter

Whisk the eggs and mix in the zucchini, kashar cheese, onion, almond flour, olive oil, salt and pepper.

Cook in the airfryer

25 min

Pour the mixture into a greased airfryer-safe tin and cook at 180°C for twenty-five minutes. If you do not have an airfryer, bake the same mixture in a 190°C oven for thirty-five minutes.

Slice and serve

5 min

Let the slice cool for five minutes after removing it from the tin, then cut into pieces and serve.

Reminder

If you do not squeeze out enough moisture from the zucchini, the mixture turns watery and becomes hard to slice once cooked. Allergens: contains egg, dairy (kashar cheese) and tree nuts (almond flour).
