Almond milk, milk and a little sugar are set with gelatine and cut into cubes in this Chinese dessert, served with a drizzle of fruit syrup as a refreshing cold treat.
Heat the almond milk, milk and sugar in a pot without letting it boil, stirring until the sugar dissolves.
Dissolve the powdered gelatine in a few spoons of hot water and stir it into the mixture.
Pour the mixture into a mould, and once it reaches room temperature, chill it in the fridge for at least 3 hours.
Turn the jelly out of the mould and cut it into cubes, serving it plain or with a drizzle of fruit syrup.
Do not let the water boil when melting the gelatine, boiling water weakens its setting power. Allergens: contains dairy and tree nuts (almond).
Using less sugar and drizzling honey syrup on top instead makes the jelly less sweet and the topping more fragrant.
