Karsambaç is a traditional dessert from Eastern Anatolia made by pouring a thick grape syrup over clean winter snow. Because the syrup is made ahead and chilled, it turns into an instantly frozen treat the moment it meets the snow. With so few ingredients and so little effort, it's a dessert shared from big bowls at crowded family tables.

Pour the syrup into a bowl and once it reaches room temperature, chill it in the fridge until thoroughly cold, keeping it there until just before serving with the snow.
Fill clean bowls generously with the very top, untouched layer of freshly fallen snow, and have them ready to serve right away.
Drizzle the cold syrup over the bowls of snow, scatter over some chopped walnuts if you like, and serve immediately.
Only use clean, untouched snow from the very top layer; the snow underneath can be mixed with dust and dirt. Pour the syrup right before serving, or the snow will start to melt. Allergens: contains tree nuts (walnut).
If you can't find grape molasses, mulberry molasses works in the same quantity; the colour turns darker and the flavour is a touch less sweet.
